Sweet Chili (my version)

1 ½ lbs. lean ground beef

2 tbsp. dried onions

2 tbsp. garlic

1 can tomato sauce or tomato puree

1 small can of tomato paste

1 can of 28 oz. crushed tomatoes

1 bell pepper sliced into tiny pieces

2 cans of large baked beans or pork n beans

1 tbsp. Worcestershire sauce

3 tbsp. brown sugar

1 tsp. salt

1 tsp. pepper

¼ c. apple cider vinegar

Break up the ground beef, garlic, and onions in a large cast iron pot on medium heat on the stovetop.  After the beef is ground and in small crumbs, mix in the tomato ingredients, bell pepper slices, baked beans, Worcestershire sauce, brown sugar, salt, pepper, and vinegar.  Turn to simmer and cover.  Stir occasionally.

To spice things up a little bit, add some chili powder.

If chili needs to be thicker add a bit more tomato paste.

Substitutions…you can switch the ground turkey or sausage for the ground beef.  Another substitution is banana peppers for the bell pepper.

Hide I must…in plain sight

 Hide I must…in plain sight

over there is a smile

it passes me by

I see two people

holding hands

they look the other way

here I sit

out on the park lawn

watching others

as they watch others

ducks quacking

near the pond

there I sit

seeing others

find joy in being

alone or with another

I wave hi

to a friend

she does not see me

she sees the one she loves

joy fills up her face

a man walks by

and waves

I wave back

his wave is for another

I sink into my lil hole

hide I must

in plain site

for no one around

has come to see me

but me

Oh yeah, me…

I can spend time with me

I like all the things I like to do

alas, I found the smile

it grew upon my face
